Pulga is the ultimate expression of the white wine of Romaneira, sourced principally from the Pulga site.
100% of the wine is fermented in french oak barrels, 60% new oak, 40% one year, for a period of 21 days at temperatures between 16 and 18 degrees celcius. Batonnage is done during four months and partial malolactic fermentation when needed. Cultured yeasts are used. The three varieties are picked and fermented separately.
